Step 1

Form the Dough Base: On a clean surface, make a mound with the flour. Create a well in the center and gently crack the eggs into it. Add a pinch of salt and the olive oil if using.

Step 2

Incorporate Ingredients: Using a fork, gently whisk the eggs, gradually incorporating the surrounding flour until the mixture becomes a sticky dough.

Step 3

Knead to Perfection: Bring the dough together with your hands. Knead vigorously for 8–10 minutes until the dough is smooth, elastic, and slightly springy. Cover with a clean cloth and let it rest for 30 minutes at room temperature.

Step 4

Roll the Dough: Lightly flour your surface and roll the dough into a thin sheet using a rolling pin or pasta machine. Aim for a delicate translucence without tearing.

Step 5

Cut Your Pasta: Shape as desired — fettuccine, tagliatelle, or ravioli. Use a sharp knife or pasta cutter for clean edges.

Step 6

Cook Briefly: Boil a large pot of salted water. Fresh pasta cooks quickly: 2–3 minutes for thin strands, 4–5 minutes for filled varieties. Taste to ensure perfect doneness.

Step 7

Serve Elegantly: Drain and gently toss with your sauce of choice, or drizzle with olive oil and a sprinkle of freshly grated Parmigiano-Reggiano.
